Raw Vegan IMBOLC'S BLESSING Spring Granola with Dark Groats, Pumpkin Seeds, Goji Berries, Cinnam

The beginning of February marked the celebration of Imbolc - the traditional festival marking the beginning of spring. In my home, we cleanse the walls and floors, clear our home with Palo Santo or White Sage, bless the home, bless my altar and I head to the kitchen for a bit of witchery. In the morning, besides a cup of tea, nothing is better than an early mourning feast. Since I am a busy goth mum of two little gothlings and a dark queen with many projects to tackle, I normally would have a big bowl of fruit or a big bowl of nice cream or a smoothie. But every once in a while, I love to feast on raw vegan waffles, raw vegan jicama breakfast tacos, chia seed pudding or my favorite - raw granola.

So, on February 3rd, I made a big batch of Raw Vegan Granola appropriately named after the celebration that welcomes spring - Imbolc's Blessing Granola. Kissed with clove, cinnamon, cardamom and mixed with vanilla, raw pumpkin seeds, organic dark buckwheat, slivered Brazil nuts, organic oats, chia seeds, goji berries and sweetened with coconut nectar - it is perfect for breakfast as cereal or a topping or a snack....the options are endless!

11/2 cup organic dark buckwheat groats (soaked for at least 3 hours or soaked overnight)

1 1/4 cup organic oats

1/4 cup coconut oil

1/3 cup black chia seeds

3/4 cup raw agave or coconut nectar

1 tablespoon vanilla extract

1/2 teaspoon Himalayan pink salt

1/2 cup raw pumpkin seeds

3/4 cup raw Brazil nuts (slivered, but you can have them roughly chopped as well)

1 level teaspoon cardamom

1 teaspoon cinnamon

1/2 teaspoon ground clove



-Drain and rinse the soaked groats and place them in a bowl; add the oats, pumpkin seeds, brazil nuts, chia seeds and goji berries.

-Next, add the salt, cinnamon, clove, cardamom, vanilla, coconut oil and coconut nectar (or agave); mix well until thoroughly combined.

-Spread the granola on to your teflex sheet or parchment paper into a thin layer and place into the dehydrator on 115 degrees overnight (or in the oven at 200 degrees for 3 hours if you do not have an dehydrator).

-Once done, let cool for 10-15 minutes.....and indulge.

The smell will fill your senses and the air...and that is how it should be. This granola is full of protein, omega-3s, prosperity, good fortune and good health. Blessed Imbolc to all. <3
