Black Mission Fig and Pistachio Nut Bars with Cardamon and Cinnamon

I adore figs. I could not see how one could not love these glorious sweet gems. As much as I love Turkish Figs, I am a devoutee of Black Mission Figs. Look...anything that begins with my favorite color is a given to become my favorite.   The deep, purple hue of the the figs in constrast with the pistachios is a sight that is breathtaking....and the taste is even better. Raw, vegan, sticky, sweet, fragant and pleasing. My little ones could not resist just one piece....and as a parent, it was something that I did not mind letting the indulge in.

 

WEAPONS YOU WILL NEED (EQUIPMENT):

-Food Processor

-9 inch spring foam pan

-Wax or parchment paper

-Spatula

 

INGREDIENTS:

-2 cups dried black mission figs (I like to remove the hard stems at the top by just gently twisting them off)

-1/2 cup raw pistachios, deshelled (for those who have nut allergies, raw sunflower seeds can be substituted)

-1 tablespoon ground cinnamon 

-1 teaspoon ground cardamon

 

LISTEN CLOSELY, CHILDREN (RECIPE)

-In the food processor, place the pistachios, cinnamon and cardomon and pulse until the nuts are roughly chopped. {Remember, you are going to run them through the processor again, so you do not want them too fine.}

-Next, add your figs in the processors and blend until it starts to come together and form a "dough". {At this point, feel free to taste test. I always recommend this just in case you wish to add more spice}

-Pour the mixture out of your food processor and into you lined springfrom pan, making sure to use the spatula to get ever bit of that goodness from the bowl.

-Using your fingers, gently start to press the mixture around into the pan, pushing the mix towards to the rim and then working it back towards the center. Once you cover the entire pan, using the spatula to evenly smooth out the mixture, making sure there are no holes or unfilled area. Get it all in there.

-Place the springfoam pan into the freezer for overnight or for at least 4-6.

-After removing it from the freezer, let it sit out for 30 minutes.

-Remove the springfoam ring, lining paper, place on cutting board and cut into squares....and serve....and indulge!

 

Makes 7-9 bars.
