Raw Vegan BLACK ENCHANTRESS Nice Cream + Crushed Raw Pumpkin Seed and Blackberries

We all have cravings.....callings....something that soothes and comforts....lures us in and we fall under it;s spell. Sometimes, the simplest things can be the greatest amount of pleasure: music, art, whatever your heart feels at that moment. For me, it can be turning on Type O Negative or Joy Divsion or Bauhaus or The Cure or Depeche Mode or NIN or Combichrist or 80's goth music , writing poetry or new music, a kiss or hug ot snuggle with my baby boys, being held in the arms of my hubby while watching a horror flick, or enjoying something that no one can resist: ice cream. In my case: nice cream.

 

I eat nice cream for mourning, midday or evening feast. Hell, sometimes I eat it all day. And the best thing about it is that you can eat as much as you want and guilt is left to beg for mercy in your presence. Plant-based goodness......oh, ever so much goodness. Normally, nice cream is made with bananas....but I like to switch it up on occassion and go not only dairy-free, but banana free as well. My BLACK ENCHANTRESS Nice Cream is three ingredients. That's it. Simplicity at it's best.

 

WEAPONS OF CHOICE {TOOLS}

Food processor

Spatula

Serving bowl of your choice

 

INGREDIENTS

3 cups cantaloupe (with the rind removed and cut into 1 inch pieces anf frozen overnight)

10 oz. frozen organic blueberries

10 oz. frozen organic dark sweet cherries

A few blackberries (either frozen or fresh)

 

TOPPINGS (OPTIONAL)

Raw pumkin seeds

 

LET'S US BEGIN......

 

RECIPE

-In the food processor, put in the frozen cantaloupe chunks and blend under the cantaloupe breaks down into small little pea-size pieces. Using the spatula, remove the lid and scrap the sides down to make sure that all the fruit is in the processor. (Note: when scrapping the sides down, make sure that the processor is off.)

 

-Next, add the blueberries and dark sweet cherries, starting with 1/2 of the amount first until well blended. Proceed to add the remaining amounts and blend until a dark hue is reached and a creamy consistency is reached.

 

-Scoop and place in the serving bowl of your choice....or eat it right out of the processor ( I have.....and it was glorious). Top it with the raw pumpkin seeds, blackberries and indulge.

 

See.......simple, yes? Mellow + sweet + tart = sweet surrender.
